--It looks as though this will simply be the warm up to tonight's (10th) meeting--

This class will contain sections on the following:

1. Where to find ingredients in Tokyo
2. Preparation and cooking of the main meal.
3. A tasty dinner.

For this meeting, we will be concentrating on the preparation of a Mexican Lasagna. Its a variation of the tradition lasagna, but using ingredients that give it a Mexican edge, instead of the Italian flavour. We will be preparing a meat version as well as a vegetarian option.

Fees include print-outs with the recipe, a detailed discussion of the cooking process, and a hot delicious meal with conversation.

THS Members: 800 yen
Non-members: 1200 yen
*The fee is subject to change, and may be adjusted due to attendance and final costs of ingredients. (fees cover ingredients for cooking, and a small fee to THS)

The class size is limited to 15 people.

Because of the change in date, it just became a dinner and didn't get recipe-ized. But for those wishing to follow up and have a go at making this themselves, here is a quick run through of the production on the meat version. When changing to a vegetarian option I replace the meat with the addition of black & kidney beans as well as corn. :

Key Ingredients:
500g minced beef
1-2 cans of refried beans
approx 20oz of salsa
approx 6 pan-sized tortillas
cheese - shredded is easiest otherwise need to make sure the is a grater - not too much is needed - less than 200g i think - mozzarella is good but a variety is even better
bell peppers
chilli peppers - enough to spice things up

keep in mind that you can alter and experiment - garlic works, and avocados sliced in the final layers are nice too

Key Steps:
1) brown and drain the beef
2) mix in the fresh cut onions and peppers
3) mix in the refried beans and salsa
4) spice it as you see fit
5) heat oven to about 170C
6) place a layer of your mixture in lasagna pan (or one of suitable size)
7) add a thin layer of cheese
8) add a single layer of tortillas
9) repeat layers until you're out of mixture - the top layer should end with the cheese
10) bake in oven for about 15 minutes

one of my favorite things of this dish is to eat the leftovers wrapped in a tortilla burrito style
